What’s the difference between a “Bäcker” and a “Konditor” in Germany?

In a hiring video for a family bakery, one woman introduces herself as Konditormeisterin — a master pastry chef — while the business itself is billed as a Bäckerei und Konditorei, bread bakery and pastry shop, named as two separate things. That’s not marketing flourish: in Germany, Bäcker (bread, rolls) and Konditor (cakes, pastries, chocolate work) are legally distinct, separately certified trades, each with its own apprenticeship.

A shop can be both, as this one is, but the training rarely fully overlaps — a Bäcker’s craft centers on dough fermentation and bread ovens, while a Konditor trains in sugar work, tempering chocolate, and cake architecture. If a shop window only says “Bäckerei,” don’t expect elaborate wedding cakes; that’s a Konditorei’s job.
